This is one of my simplest soup DIY's, which is easy for kids and grownups alike, and perfect for any healthy lifestyle. Cozy up with a warm bowl and tag me in your re-creations!
•16 ounces steamed/cooked cauliflower •3 cups of chicken or vegetable stock or broth (more or less can be added to suit consistency preference) •1-2 tbsp extra virgin olive oil (depending on preference) •2 tsp sea salt (more or less to taste) •Ground pepper to taste
Heat stock or broth in medium pot, bringing just below a boil. Combine all ingredients into a blender or food processor and puree until smooth. The texture may vary depending on what blender you use. Garnish with a drizzle of olive oil, melted butter, salt and/or pepper. Serve and enjoy hot!
